How can hotels and restaurants forecast rooms and covers with limited data?
Start simply: use the same weekday's history, add current bookings compared with what was typical at the same lead time, and adjust for events and seasons. Measure the gap between forecast and actual each day, then refine. Complex models are only worth it if they beat this baseline.
A forecast is useful when it drives a decision, such as how many staff to roster or how much to prepare.
Steps:
- Collect at least a year of daily history, if available.
- Separate days with events or closures.
- Compare forecasts with actuals and keep a record.
Commonly misread:
- Treating a forecast as a certainty rather than a range.
- Judging accuracy on one good or bad day.
